From Grape to Glass

Wine is more than just a beverage; it's a natural creation refined by human hands. At My Arbor, the wine selection holds special significance. The hotel's own wine cellar offers me a remarkable selection with a collection of over 900 labels of South Tyrolean wines and rarities from all over the world.

The journey of wines begins in the vineyards, where the grapes mature under the warmth of the summer sun. As autumn arrives and the grapes reach peak ripeness, the harvest commences. I take great pleasure in savoring these exquisite wines at My Arbor, whether during a delightful dinner, as an aperitif, or simply to unwind after a day.

With each glass, I embark on a journey, delving into the story behind the wines I enjoy at My Arbor, from the vineyard to the moment it meets the glass.

The journey

1. Vineyard

The story of each wine begins in the vineyard. In South Tyrol, nestled at the foot of the Dolomites and in sunny valleys, the vines thrive, drawing on the unique characteristics of their terroir and the local climate. Winemakers treat their grapes with dedication and care, as each variety demands special attention to reach its full potential. The region’s diverse altitudes, slopes, and soils support the cultivation of a wide array of grape varieties, contributing to South Tyrol’s reputation as a unique and multifaceted wine region.

The grape harvest begins in late summer or early autumn, when the grapes have reached perfect ripeness. It is a magical time when the air is filled with sweet scents and nature glows in the most beautiful colors. The grapes are carefully harvested by hand to ensure that only the best grapes are selected.

 

2. Processing

After the harvest, the grapes are brought to the winery, where the winemaking process begins. First, the grapes are destemmed and gently pressed to extract the precious juice, known as must. This must is then placed in large barrels or stainless steel tanks, where fermentation takes place.

During fermentation, natural yeasts transform the sugar in the grape juice into alcohol and carbon dioxide. This process can take several weeks to months, depending on the grape variety and the desired wine style. During this time, the aromas develop, and the wine’s character begins to unfold.

 

3. Maturation

After fermentation, the wine enters its maturation phase. Wines mature in oak barrels or stainless-steel tanks, where they develop their final structure and complexity. The choice of barrel is crucial: oak barrels impart additional flavors of vanilla, caramel, and spices, while stainless steel tanks preserve the fruity and floral notes.

During maturation, the wines rest in cool cellars, where they are regularly tasted and cared for. It is a time of tranquility and refinement, during which the wine fully expresses itself.

 

4. Tasting

After months or even years of waiting, the wine is finally ready to be enjoyed. As it is poured, the aromas unfold and fill the air with a tantalizing scent.

Each sip tells the story of its origin, from the sunlit vineyards to the cool cellars where it matured. The diversity of flavors and nuances enchants the senses and allows me to immerse myselves in the world of wine.

Grape Varieties – A Diverse Selection

At My Arbor, I enjoy a curated selection of wines made from a variety of grape varieties, each bringing its own distinct characteristics to the table.

 

To deepen my appreciation, Mehmet has prepared a small "Wine ABC" for me:

 

  • Sauvignon Blanc: Known for its freshness and vibrant acidity, this variety features aromas of elderflower, citrus fruits, green bell pepper, and gooseberry.
     
  • Chardonnay: A versatile wine that can be enjoyed as both a fresh, subtle wine and a complex, oak-aged wine. Typical aromas include apple, pear, and butter. It is particularly exceptional in its sparkling form, whether as a sparkling wine or Champagne.
     
  • Pinot Blanc: This variety beautifully expresses the South Tyrolean character and terroir, offering a fresh, fruity profile that ranges from light to full-bodied versions.
     
  • Lagrein: One of the two native red grape varieties of South Tyrol, Lagrein captivates with its deep, dark color and robust aroma spectrum, including dark cherries, blackcurrants, forest berries, licorice, chocolate, cinnamon, and black pepper.
     
  • Vernatsch: A light-footed red wine with aromas of bright fruits and red spices. Low in tannins and fresh with a light body, it is an ideal food companion and an excellent everyday wine.
     
  • Gewürztraminer: The native white variety in the cellar of My Arbor, highly aromatic with floral notes of roses and tulips, oriental spices, exotic fruit, and lychee. It is also ideal as a sweet wine.
     
  • Pinot Noir: An elegant red wine with delicate aromas of red fruits like cherry and raspberry, often accompanied by earthy notes. Known as the "Queen" and "Diva" of grape varieties, Pinot Noir is very demanding in both the vineyard and the cellar, requiring great attention and care.
     
  • Merlot: Soft and velvety, with aromas of plum, chocolate, and spices.

As a guest at My Arbor, I have the opportunity to explore this diversity during a wine tasting. Under the expert guidance of Head Sommelier Mehmet, I can experience the subtle differences between various grape varieties and vintages. Each tasting is a journey through the world of wine, deepening my knowledge of this noble beverage.
